Apple-cinnamon breakfast muffins.

The morning that I made this recipe, I had been craving the apple-cinnamon muffins that my parents would buy me as a young kid. Of course, those ones were a lot more unhealthy. Nonetheless, these muffins hit the spot. They’re healthy enough for breakfast, but still decadent and warming.

  • ½ cup brown sugar
  • ¾ cup soy milk
  • 2 tbsp neutral oil
  • 1 cup wholewheat flour
  • 1 cup all-purpose flour
  • 3½ tsp baking powder
  • 1 medium-sized apple
  • 2tsp cinnamon

 

  1. Preheat the oven to 180°C.
  2. Mix the milk and the oil in a bowl and mix in the sugar until dissolved.
  3. Add in the flour, the cinnamon and the baking powder and combine. 
  4. Add the diced apple and mix.
  5. Pour the batter into a lightly greased muffin pan or into muffin liners, filling to the top.
  6. Bake for 15 minutes, rotating halfway. Test with a toothpick to a make sure the muffins are fully cooked. If it comes out clean, they’re good to go.
